1. Salt & Pepper Generously—45 minutes before cooking if you have the time.
2. Throw into a sizzling hot skillet or flaming grill—flip several times as it cooks.
3. Remove from Heat at 120-135° internal temp—let rest for 5 minutes before slicing or you'll loose a lot of the awesome, flavor-packed juice.
