Mexican Queso

Here's a lively appetizer to begin your meal. This recipe is creamy and mildly spicy with fresh notes added by the cilantro. Enjoy it with warmed tortillas, chips, or as a cheesy sauce for your favorite Mexican dish.

Ingredients
- 2 tbsp. Unsalted butter
- 2 tbsp. green chili or jalapenos, chopped, canned or fresh
- 1 small onion, diced
- 1/2 tsp. salt, divided
- 3 garlic cloves, minced
- 8 oz. sour cream ( You can substitute the sour cream for 8 oz. of cream cheese and 3/4 cup of milk)
- 8 oz. Cheddar or Colby cheese - about 2 cups, shredded
- 8 oz. pepper jack cheese, about 2 cups, shredded
- 1/2 cup tomatoes, diced
- 2 tbsp. cilantro, chopped (optional)
Instructions
- Melt butter in medium saucepan and add chopped onion and peppers.
- Sauté for 4-5 min on medium heat til onions are translucent.
- Add garlic and cook til fragrant, about 30 seconds.
- Add sour cream to the pot and stir til it is melted and smooth.
- Reduce heat to low and start adding cheese in medium handfuls stirring after each handful. Be sure it's mostly melted before adding another handful.
- Stir in tomatoes, cilantro, and remaining 1/4 tsp. of salt. If the queso is too thick for your liking add a little milk until you reach the desired consistency.
- Remove immediately from heat and serve while hot with tortilla chips or warm tortillas.
