Chicken Liver  Pâté
This is Sally Fallon's recipe for Chicken Liver Pâté. Liver Pâté is a highly nutritious and a classic French dish. It is a rich, spreadable appetizer, and goes great with artisan bread and crackers. You could also add it to your next charcuterie board!

Directions

Ingredients

  • 3 tablespoons butter
  • 1 pound chicken livers
  • 1/2-pound mushrooms, washed and coarsely chopped
  • 1 bunch green onion or 1 small yellow onion, chopped
  • 2/3 cup dry white wine or vermouth
  • 1 clove garlic, mashed
  • 1/2 teaspoon dry mustard
  • 1/4 teaspoon dill
  • 1/4 tsp. rosemary
  • 1 tablespoon lemon juice
  • 1/4 cup butter, softened

Instructions

  1. Melt butter in heavy skillet. 
  2. Add livers, onions, and mushrooms and cook, stirring occasionally for about 10 minutes until livers are browned. 
  3. Add wine, garlic, mustard, lemon juice and herbs. 
  4. Bring to boil and cook, uncovered, until the liquid is gone. 
  5. Allow to cool. 
  6. Process in a food processor with softened butter. 
  7. Season with salt to taste. 
  8. Place in a crock or mold and chill well. 
  9. Serve with whole grain bread or crackers.
