Directions
Instructions
- Take Prime Rib Roast out of refrigerator about 3 hours before cooking.
- Cut off the bones at this point if you want to make it easier to serve later. Even if you cut them off now, you can still set the roast back onto the bones so that the meat doesn't lie directly on the pan. Not a big deal either way.
- Salt and Pepper generously on all sides.
- After several hours at room temperature, pre-heat the oven to 450-500 degrees F.
- Pat roast dry and add a little more salt and pepper if you wish.
- Place the Prime Rib in a roasting pan in the oven for 15-20 minutes.
- Reduce oven temperature to 325 degrees.
- Continue cooking but check internal temperature after about 30 minutes and keep checking more often as you get closer to finish temperature.
- Cook until internal temperature is about 120-130 degrees for medium-rare/ medium. Remember that temperature will rise 5-10 degrees after you remove the roast from the oven... Do NOT overcook!
- Cover it with foil and let rest for 15-20 minutes before slicing and serving.
Happy Cooking!
