Deluxe Egg Salad Spread

Ingredients
- (12 eggs) Dozen Large/X Large Soy-free Eggs
- (3/4 cup) Mayonnaise
- (3/4 tsp) Celtic Sea Salt
Directions
Here is the recipe for a Basic Egg Salad Spread... Scroll down for the Deluxe version.
- 12 eggs, hardboiled
- 3/4 cup mayonnaise
- 3/4 tsp. salt
1. Peel the hardboiled eggs and mash or chop.
2. Stir in the mayo and salt.
This is so simple and good spread on fresh, sliced tomatoes or toast.
Refrigerate the extra and enjoy it over several days. Or if this is too much you can feel free to divide all the amounts by 3 to make a smaller recipe. Use 4 eggs, 1/4 cup mayonnaise and 1/4 tsp. salt.
Now for the Deluxe Egg Salad! :)
Ingredients:
- 12 eggs, hardboiled
- 1/4 cup finely chopped onion
- 1 cup mayonnaise
- 1/2 cup sour cream or Greek yogurt
- 2 Tbsp. yellow mustard
- 2-3 tsp. lemon juice
- 3/4 tsp. salt
- 1/4 tsp. each of dill weed, paprika, and black pepper
Directions:
1. Chop or mash the peeled, hardboiled eggs.
2. Add the rest of the ingredients and stir together well.
My favorite way to eat this is on thick slices of fresh tomatoes! You may also enjoy it in a pita pocket or on lettuce leaves.
Makes 4 cups.
