Giving Back to the Earth

This year was special. It was a dream come true!

What was so special about it?

We grew a crop from the earth... to give back to the earth.

Yes, you heard right. We bought seed, planted it, and carefully nurtured a multi-species crop for no other purpose than to return it to the earth. This 'giving back' crop feeds the plethora of microbes that builds strong healthy soils, and at the same time it is building organic matter and sequestering carbon.

And it works on a large scale. We're renting close to 400 acres of new land that was chemical farmed and are transitioning it to certified organic land. This 'giving back' plan vastly improves the process.

So, rejoice with us!

It's your dedicated support that gives us the financial strength to give back like this! This was not a small investment and we absolutely could not have done it without you.

By the time we bought the 8 different kinds of seeds, prepared the seedbed, planted the land and finally tilled the resulting tons of organic biomass back into the soil... our costs were at least $175 per acre. Thank you for helping us heal the land this way!

Here are a few pictures. See why we are excited!

IMG_1266_1.jpg

We ordered and planted eight species of summer-loving plants. Plus a few other species came along with the mix. (We purchased the cover crop seed mix from Green Cover Seeds. Keith Berns and his wife actually visited our farm and provided the expertise for this project. Check them out. They are amazing.)

Five of the species were legumes that pull nitrogen from the atmosphere and put it back into the soil. In that way, we can grow our own fertilizer as well as our own compost.

IMG_1288.jpg

The tall plants are Sudan Grass, Sorghum, Sunflowers and Sun Hemp.

IMG_1311.jpg

Lower in the vegetation forest were Black Cow Peas, Rape Seed, Berseem Clover, Mung Beans, Soybeans, Buckwheat and Perl Millet.

IMG_1403.jpg

One day, I cut a bunch of brassicas (rape seed) for a salad. They looked so good!

IMG_1728.jpg

The bees loved this new way of farming! There were blooming sunflowers, sun hemp and buckwheat and sorghum on 100s of acres and not a chemical in sight or smell. The other life species loved it too. I never saw so many barn swallows and butterflies, lady bugs and other beneficial insects!

IMG_1376.jpg

We estimated close to 12,000 lbs. of biomass growing per acre. And 100% of that is going to be composted straight back into the soil. And that was just the part above ground. Soil scientists tell me that an equal amount of roots grows beneath the surface as the amount of plant that grows above the ground.

IMG_1749.jpg

Winfred and Roland and I check out the root nodules of a sun hemp plant... Root nodules are the specific part of legume plants that fix atmospheric nitrogen in symbiotic relationship with rhizobia bacteria. God has an amazing process in place so that we don't need chemical nitrogen if we just follow his plan!

IMG_1725.jpg

A close up of a few of the root nodules. If I squeeze them...

IMG_1726.jpg

Sure enough... they are full of Natural Nitrogen, God-given plant food! It's as the song says, "Our Father's wondrous works we see, in the earth and sea and sky."

IMG_1486.jpg

So finally the day comes that we work all of this organic biomass back into the soil. "Feeding the stomach of the earth," I like to call it. With the success we've had with our cover crops this year, we hope to do this every year. The organic matter percent of most of our soils right now is between 4 to 5%. With these cover cropping, soil regenerative methods used every year we hope to build that close to 8-9% organic matter.

IMG_1853.jpg

A week after working the biomass down

Just look at that thick layer of rotting compost and organic matter! You can almost hear the earthworms singing!

If we raise the organic matter 4 percentage points, that means that the water holding capacity of every acre will have increased by 60,000 gallons of water. (15,000 gallons of extra water holding capacity for every % of OM increase is a conservative figure).

60,000 gallons of water conserved annually over the 650 acres of land that we farm at The Family Cow is huge! 39 million gallons of water conserved!

This increased water holding capacity will be especially of value to us since some of this new organic land is in Newburg PA which is a very droughty section of God's good earth. Those who live in Newburg will understand. :)

So anyway, rejoice with us! I hope to tell you more about our cover cropping, soil regeneration, carbon sequestering dreams in the future.

Your Farmer,
Edwin

NOTE: I wrote this "giving back to the earth" farm story for our 2017 season. Since then, the boys and I have continued and expanded this practice. In fact, for our 2019 season, on some of our fields, we grew two "giving back" crops to every one crop that we harvested!

3 secrets to our tender & juicy 100% Grass-fed Beef Steaks

Good morning Farm Family,This beautiful spring weather already had me out grilling for dinner last week... I just love this time of year!Today the spotlight is on our thick cut, 100% Grass-fed Beef Steaks—full of rich marbling, deep beefy flavor, and juicy tenderness. Our premium steaks truly deliver a superior experience over what is served at most steakhouses. In fact, Willowsong, a classy restaurant in Washington, DC features our New York Strip Steak as their signature steak dinner.Chef Jeff recently invited our family down for a personal tour and served us our own steaks prepared in his signature style with a Red Wine dry aging for added flavor. Below is the actual steak served to me personally at medium/rare perfection. I know a picture is worth a thousand words, but you definitely need to taste this steak for yourself! :) Let me explain why our steaks are so incredible whether they are served at a fancy restaurant or at-home grill.1. Real Marbling Takes TimeMost grass-fed beef has a reputation for being lean, dry, and tough. Not ours. Our cattle forage on a wide variety of regenerative pasture grasses for 6-8 months longer than most beef. This allows them to slowly build up 100% Grass-fed fat the natural way.No grain, ever. Our beef marbling is hard-earned from grass only.It is difficult to achieve, but the reward is worth the investment. While we don't hit "Prime grade" very often, our focus keeps many of our steaks solidly in the Choice range—well above the average lean grass-fed beef. This extra time on grass to build fat & flavor is critical... But the next details are just as important.2. Regenerative Pasture Diversity Drives FlavorThe rich diversity of grasses in our regenerative pastures is a big contributor to our beef's elite flavor profile. Grain-fed CAFO beef eat a constrained diet of mostly corn & soy. By contrast, our cattle enjoy a "salad bar" of nutrients, which results in complex flavor and 5x more Omega-3 fatty acids than grain-fed beef.3. The 10 Day Dry AgeThe final step happens at our own USDA Butcher Shop. We dry-age our beef for 10+ days to increase tenderness and allow extra moisture to evaporate. This concentrates the "beefy" flavor you can't find in grocery store meat.Ready for the Feast? As you prepare for a fine dining experience with one of these premium steaks, please follow my step-by-step recipe guide to Grill or Pan-Fry our steaks to perfection. (If you have my Free Steak Guide these recipes are posted there as well.)This cooking moment is the culmination of all the careful work from Regenerative Farm Pastures to Butcher Shop Dry Aging.100% Grass-fed marbling melts as it cooks, basting the steak internally to create an incredible tender, savory steak. Salt & Pepper with a pat of butter on top for bonus flavor... medium-rare finish... a short rest off the heat... And THE FEAST is ready to begin.Enjoy the experience with family and create treasured memories around the table.Happy grilling with clean, delicious beef from your family farmer! All the best,Wesley~5th generation on the farm >> Shop Delicious Grass-fed Steaks << P.S. We’ve ensured our meat is always Citric Acid-FREE. Raw Milk Cheese to Boost your Immunity

Last week Dad shared his analogy Of Raw Milk and Swimming... If we want to "relax and swim" with strong immunity and good gut health we'll need as much raw living food in our diet as possible. Thousands of families have "learned to swim" with our Organically Grass-fed A2A2 Raw Cow Milk... And we've helped many of them take the next step to make Raw Milk Kefir at home.

Of Raw Milk and Swimming

Good morning Family Cow farm Tribe! It's been a long time since I've explained in detail the probiotic building-of-immunity-pathway to health and wellness as opposed to the antibiotic kill-all-bacteria-method. It is important to understand that these are my answers, not necessarily the answer. Each of you will need to decide and be ultimately responsible for yourself and for your family. Let’s start with an analogy. I find that sometimes observing and understanding the simple and visible helps us grasp of the more complex and obscure. According to the CDC, there are 4,500 drowning deaths per year in USA. That works out to over 12 deaths by drowning per day. For every death caused by drowning there are another 20 near-drownings involving hospitalization and many times permanent brain damage. These are sobering facts. This is reality for families somewhere in America every day. It is only normal for parents, and others who care for the health and wellbeing of our communities, to ask the obvious question. "What can we do to protect ourselves and our loved ones from a similar tragedy?" Since all drowning occurs in water, we might quite logically conclude that water is the enemy and that the best preventive would be to prohibit people from getting into water. Make laws against getting into water. Pass regulations. Establish a Federal Drowning Prevention agency to enforce the laws. Raise taxes to pay them to protect us. The FDP could arrest anyone who dared to violate the law which obviously was established for public welfare. You see where I’m going with this? An alternative drowning prevention is to learn to swim and to teach your children to swim. The ability to swim makes you and your loved ones practically immune to drowning while avoiding water like the plague only leaves your family more vulnerable. More vulnerable since it is highly possible that sometime in your life, in spite of your best attempts, you or your children will find yourselves unexpectedly in water without the least idea how to save yourselves. Swimming does not make one 100% immune to drowning of course, so the FDP can always publicize a few highly emotional stories per year in which those who were experienced swimmers still drowned. Parents who dared to risk their children’s lives by attempting to teach them to swim, as a preventive to drowning, could be prosecuted for willful endangerment and their children taken from them. After all, they were carelessly ignoring data from the CDC which irrefutably documents thousands of deaths per year caused by water. I know this analogy is not perfect, so don’t drag me through the coals to tell me so, but there are many parallels. The Federal government estimates that in America there are about 48 million cases of foodborne illness annually with 3,000 deaths. This is the equivalent of sickening 1 in 6 Americans each year. These also are sobering facts. And it is only normal that parents and others ask the obvious question. "What can we do to protect ourselves?" Many well-meaning people have concluded that bacteria are the enemy and so have set out to kill… set out to sterilize themselves and their environment. "Kill all the bacteria! Fight BAC! Buy Purell… put a dispenser in every room. Get antibacterial soap. Anti-biotics for every sniffle. Outlaw unpasteurized cider. Pasteurize the nuts and almonds too. Outlaw raw milk. These foods may contain pathogens!" There is only one problem with these bacteriaphobic reactions. In spite of our best attempts, in spite of living in constant fear of the microbe, and in spite of efforts to increasingly sterilize our food… if we chose to live this way, someday a stray bacterium will penetrate our sterile bubble… and our artificially protected, flabby immune systems will have no defense against it. The alternative defense against foodborne illness is to embrace bacteria as a part of a larger eco-system, within which we humans integrate ourselves. It's much like learning to swim. We who take this approach are not careless and neither do we underestimate the power of the microbe. Rather, we respect it, and because of this respect we carefully and intentionally educate and help our immune system in its duty of defending us. We focus on life instead of killing. Pro-biotic instead of Anti-biotic. This is what raw milk, raw cheese, butter & cream, and Lacto Fermented Veggies are all about… building immunity and health! We learn to swim and teach our children to swim. Instead of fearing the water we relax and enjoy life as God created it! We embrace living whole foods. Whole foods full of immunity building probiotic bacteria, living foods full of nutrient-absorbing, living enzymes. Whole living foods full of unadulterated, unprocessed, unmessedwith, cell-nourishing, cell-repairing raw fats and protein. Only living foods give life. Only living foods full of a diversity of natural micro flora from our local, natural environment can provide the education and information that our immune systems desperately need to actually protect us as God designed it. God has designed the entire eco-system to live in harmony with bacteria. Be clean, but don't kill The sooner we drop our hubris and accept this humbling fact, the wiser and stronger and healthier we will be. Think about it!
