"I sprinkled a very, very light coating of baking soda on both sides, and let it sit for about 15 mins., and then rinsed them in water and dried them with paper towels. They were SO tender I couldn't believe it. They're pretty tender already (if I don't overcook them), but with the baking soda, they're like a fillet mignon!
