Pan frying on the stove top is also a great method since you don't loose any of the good juices. Do a quick sear on both sides with butter and salt and pepper in the pan.... slice thin against the grain and you have delicious steak dinner.
Note: these steaks are not always the whole beef flank... we cut them in half if they are very large to keep the average steak weight near 1 lb.
