Take the deep flavor of a Ribeye Steak, cross it with the tenderness of Filet Mignon, and what do you get? Hanger steak – a delicious strip of meat that hangs from the cow's diaphragm. This muscle does very little work so it’s going to be extremely tender and packed with rich beefy flavor.

The sad thing is, like Filet Mignon, there's only a few of these amazing steaks per animal. To help this specialty cut reach around to more people, we split one large Hanger Steak down into 8-12 oz. per pack.

Note of Interest: The Hanging Tender or Hanger Steak is sometimes known as "Butcher's Steak" since butchers would often keep the prized steak for themselves because of its superior flavor and tenderness. Don't worry, we aren't keeping any back in our butcher shop! :)
