Ancient Einkorn is the most primitive form of wheat on Earth. It is high in vitamins and nutrients, and contains a different type of gluten, which makes it a first choice for many who are gluten sensitive.
This wheat is grown and processed at a local organic farm not far from us. Right now it's packed in 2 pound bags.

Einkorn wheat has remained untouched by modern hybridization and large-scale agriculture. It is fast becoming the wheat of choice for the gluten sensitive due to its very weak and easily digestible gluten.
It can be used 1:1 like other whole wheat flour. Have fun experimenting! :)
Fun fact: Most Einkorn wheat flour sold in the U.S. is imported from Italy. Not ours! It's grown right here in PA on an organic farm.
